What does the creation and evolution of the Andes (tectonic processes)have to do with the ancient Gondwand?

The Andes formed in response to subduction, which began in the Juric period, so about the same time as the beginning of the break-up of Gondwand. At this time South America was still part of Gondwand, as South America did not split from Africa until about 100 million years ago (Cretaceous Period). The splitting of the supercontinent meant that subduction had to be occurring somewhere, and part of that would have been along the West coast of what is now South America. the subduction is still continuing today, and the largest amount of uplift occurred during the Cretaceous. The plateaus that you mention are ancient cratonic cores within the South American Continent, and they were also part of Gondwand.
